Ingredients
10 firm tomatoes
1/2 kg mince meat
1/2 c butter
1 onion, finely chopped
1 tbsp ginger garlic paste
salt, pepper, nutmeg, dried mixed herbs
1 c grated kefalotiri or cheddar cheese
1 c rice
2 tbsp chopped parsley
Method
Cut a slice from the top of the tomatoes and keep it aside. Scoop out the tomatoes with a spoon, salt them and then drain.
Heat butter in a pan. Saute onions till translucent. Add ginger garlic paste and after a few seconds, add the mince. Brown the mince. Add the pulp of the tomatoes without the seeds. (You may add a little water to cook the mince).
When mince is cooked and dry, add the salt, pepper, rice, nutmeg,herbs and parsley.
Stuff the tomatoes with this mixture and put back their lids. Put the rest of the butter over them
Bake in a moderate oven (180C) for 30-40 min, till the tomato skins look cooked.
