Cream of Spinach Soup

 

**Turkey broth works great and is something you can make easily with the bones and junk from any turkey time meal.  You do not need vegetables in it to make, just carcass and bones and cook down.  When cools and jells, scrape off fat.  This is important.  If it doesn't jell, you haven't cooked it down enough.

Ingredients:

4 Tbls butter (1/2 stick)

1 med. size onion, chopped

4 cups fresh spinach, chopped rough (1lb. bag)

¼ cup flour

1 tsp salt

¼ tsp pepper

2 cups chicken or turkey broth

1 cup water

1 cup half and half

1 tsp lemon juice

Parmesan cheese as desired

 

Directions:

 

Melt butter and sauté onions until tender.  Add spinach and cook until well coated.  (1–2 min.)

Stir in flour, salt, pepper, and mix thoroughly.

Gradually stir in broth.

Cook, stirring constantly until thickened.

Stir in half & half again till thick.

Add lemon juice and stir.

Thin with the water and cook until bubbles.  Add more water if necessary.

Serve with 1-2 Tbls graded parmesan cheese on top.
