Spicy Chopped Chicken
10 oz cooked chicken breast
2 shallots chopped
3 scallions chopped
1 green pepper (jalapeno or serrano type)
2 tablespoon lemon juice
1 tablespoon light soy sauce
1 pinch chili powder
10 mint leaves
5 coriander leaves
Chop the chicken breast then mix together all the ingredients except the garnish. Sprinkle with the chopped mint and coriander leaves. Serve with plain rice. Source: Discover Thai Cooking.
