Gai Pad Prik Haeng (Chicken Fried With Chili And Nuts)


2 tablespoon oil
1 garlic clove finely chopped
5 dried long chilies chopped
4 oz chicken breast finely sliced
1 tablespoon fish sauce
2 tablespoon roasted peanuts
6 small thin french beans cuts in 1 pieces
3 tablespoon stock or broth
1 tablespoon light soy sauce
1 tablespoon dark soy sauce
1/4 teaspoon sugar

In a work or frying pan heat the oil until a light haze appears. Fry the garlic until golden brown. Add the chilies and stir. Add the chicken meat, stir and cook until the meat is slightly opaque. Stirring after each addition, and the remaining ingredients, one by one. Cook for a minute or two, making sure the meat is cooked through, and serve.
