PECAN BISCOTTI

 

INGREDIENTS

 

INSTRUCTIONS

  1. Preheat oven to 350 degrees.
  2. Coat a cookie sheet with nonstick spray.
  3. Blend the eggs with the sugar.
  4. Beat in the margarine, water and vanilla till smooth.
  5. Add the flour, pecans and baking powder.
  6. Mix until a soft dough ball forms.
  7. Divide the dough in three equal portions
  8. On a lightly floured surface roll each portion into a log shape.
  9. Place the three rolls on the baking sheet.
  10. Bake for twenty minutes.
  11. Remove logs from the cookie sheet and let cool for five minutes.
  12. Cut the logs on an angle into half inch slices.
  13. Re-spray the baking sheet with non stick spray.
  14. Place the slices cut side down on the cookie sheet.
  15. Bake for 12-15 minutes.
  16. Flip the cookies to the other side.
  17. Bake for an additional 10-12 minutes.
  18. Eat.

 Store in an airtight container for 2 weeks or freeze for about a month. Goes great with coffee or tea.
