1996 Wines Available:

Red Wines -

Vin di Pasqualina is a light, fruity red wine made from the Chambourcin grape in the style of nouveau Beaujolais. The grapes are not crushed prior to fermentation, but are allowed to ferment whole (carbonic maceration). Without the skin contact of traditional red wine fermentation in which the grapes are crushed, the color is delicate, and the wine is light, fruity and designed to drink young.

The second red wine, Chambourcin was made using the traditional method of crushing the grapes prior to fermentation. This allows for much greater contact between the skin and the juice, resulting in a fuller bodied wine with more color and tannin. The juice was pressed off of the skins before the completion of fermentation, while there was still some sweetness in the must, to produce a dry wine with a beautiful appearance and with enough fruit to balance acidity in the absence of extended barrel aging. This is a more serious table wine and pairs well with simple meat dishes (i.e. veal, roast beef) or light pasta's.

Chambourcin Riserva is our third red wine. After crushing and completion of fermentation, the grapes were allowed to remain in contact with the fermented juice for an additional two weeks, giving tremendous color and body to the wine. This wine was put into new moderately charred oak barrels as soon as possible and left in as long as possible. We maintained a little sweetness to balance the acidity and tannins from the skins and from the oak. The finished wine is very full bodied and has a distinct "Port" nose and flavor. A fine after dinner wine that complements fruit, nuts, cheese, and even a piece of chocolate.

White Wines -

Dulcinea wine is made with the Seyval grape. As is typical with white wines, the grapes are pressed soon after crushing, limiting contact with the skin. Our white wines are very crisp, citrus like and acidic. With Dulcinea we decided to leave a little sweetness to balance the acidity.

Seyval is the bone dry version of Dulcinea. Very dry and crisp, we are always reminded of grapefruit and citrus fruits. This wine will stand up to the spiciest Buffalo Wings.
