Bannock
Recipe
4 cups flour
1 teaspoon salt
4 teaspoons baking powder
4 tablespoons oil
About 1 1/2 cups water
Mix ingredients and add water. Knead approximately 10 minutes by
hand or 5 minutes in a mixer. You can add cinnamon and brown
sugar to the dough or sprinkle it on after it's cooked. Pat the
dough into very flat pancakes, less than a 1/4 inch thick. Add
about a 1/4 inch of oil into a frying pan. Heat up and place
dough into frying pan. Let bottom get golden brown and air
bubbles form on top. Flip over and cook the other side. Remove
from pan and serve plain or sprinkle on a mixture of brown sugar
and cinnamon.
Served plain you can eat them with stew, spaghetti, chili, etc. Thanks
Kansas for this recipe Jim likes those bread sticks that
come with pizza so I am going to make this banock. I think it
will be very similar to the bread sticks. I will add some grated
cheddar to the dough when I knead it.
Hot Biscuits go with any dinner.
Mix together 2 cups of flour with 4 tsp. of baking powder and 1 tsp. salt. Cut in 1/4 cup of margarine or shortening with a pastry blender or 2 knives or fingers will also do. Mix until the consistency of coarse cornmeal. Make a well in center of these ingredients and add about 3/4 cup of milk slowly. Now stir the dough vigorously until it comes freely from the side of the bowl. Turn dough onto lightly floured counter and knead lightly for a few minutes. Roll or pat out to desired thickness about 1/2 inch is good. Cut with floured cutter. Drinking glass or what ever. Preheat oven to 450 and bake for 12 to 15 minutes. For variety add 2 tsp. of any herb (fresh or dried) to the flour or some grated cheese to the flour when preparing.
Candy-Speckled Popcorn Cake
Pop 2 pkgs of microwave popcorn in microwave. Remove any uncooked kernels.
Over low heat melt 1/2 cup of margarine with 1 bag of colored mini. marshmallows. Add the popped corn to the melted mixture. Add 1 cup of colorful candy coated chocolate such as m and m's or smarites. With slightly greased hands, pat the mixture into nonstick mini muffin pans. Place in the fridge for five minutes, then invert onto a serving plate. Note::: You can also form into popcorn balls. Kids will have a ball making these.
Zucchini Bread or cake.
The best birthday cake ever.
In small bowl mix up 2 cups of flour with 2 tsp. of cinnamon, 2 tsp. baking soda, 1 tsp. salt, 1/2 tsp. of baking powder
Beat 3 eggs in large bowl Gradually add 2 cups of sugar and beat until thick and lemon colored. Add 3/4 cup of vegetable oil or 3/4 cup of applesauce whichever you desire and beat well. Mix in 2 cups of grated zucchini, 1/2 cup each of walnuts and raisins if you like. Add the dry ingredients and mix well. Put in 2 loaf pans or one bundt pan or one oblong cake pan if you are making it for a birthday cake. Bake for 50 minutes in a preheated 350 oven. I just made this with no nuts but a whole cup of raisins and 1 tsp. ground ginger. I just can't seem to follow a recipe, I always have to change something. Apple sauce is better than oil if you have it..
Let cake cool and then Mix 1/4 cup of philadelphia cream cheese with 1/4 cup of margarine and 2 cups of icing sugar and 1 tsp. vanilla. Spread on cake and decorate for a birthday cake.
Johnny Cake or Cornmeal Bread.
Combine in a bowl 1 cup of cornmeal and 1 cup of flour and 1 Tbsp. of baking powder and 1/4 tsp. of salt. In another bowl, beat 4 Tbsp. margarine and add 3 Tbsp. sugar and 1 egg and beat Add 1 cup of milk and beat. Add to other bowl and mix well and put in 8x8 pan and bake @ 425 for 30 minutes.
Banana
Bread
2 1/2 c flour
1 c. granulated sugar
2 tsps. baking powder
2 tsps. cinnamon
1 tsp baking soda
1/2 tsp. nutmeg
1/2 tsp. cloves
1 c bananas -- mashed
1 c. water
1/2 c sour cream
2 egg whites -- whipped
Preheat oven at 350. Prepare a 8 x 4 x 2"
loaf pan with cooking spray and
flour; set aside. In a mixing bowl, combine flour, sugar,
baking powder,
cinnamon, baking soda, nutmeg, and cloves. In another
mixing bowl, combine
bananas, water, sour cream, and egg whites. Mix dry
ingredients with wet
ingredients just until moistened. Pour batter into
prepared pan. Bake 60
minutes.
The
Original Nanaimo Bar
Bottom Layer
1/2 cup
unsalted butter
1/4 cup sugar
5 tbsps cocoa
1 egg beaten
1 and 3/4 cup of graham wafer crumbs
1/2 cup finely chopped almonds
1 cup coconut
Melt first 3 ingredients in top of a double boiler. Add egg and
stir to cook and thicken. Remove from heat. Stir in crumbs,
coconut and nuts. Press firmly into an ungreased 8x8 pan.
Second
Layer
1/2 cup butter
2 tbsps and 2 tsps cream.
2 tbsps vanilla custard powder
2 cups icing sugar.
Cream butter, cream, custard powder and icing sugar together well.
Beat until light. Spread over bottom layer.
Third
Layer
4 squares semi-sweet chocolate (1 oz. each)
2 tbsps. butter.
Melt chocolate and butter over low heat. Cool. When cool, but
still liquid, pour over second layer and chill in refrigerator.
Carrot Cake
2 cups white
sugar
1 cup oil
4 beaten eggs
2 cups flour
1 tsp baking powder
1 tsp baking soda
1tsp salt
1 tsp cinnamon
3 cups grated carrots
1 cup chopped walnuts (optional)
pinch of cloves and nutmeg.
Mix in order given and put in a greased 9 x 13 inch pan. Bake at 350 for 1 hour. Ice with philedelphia cheese icing.
Philedelphia
cream cheese icing.
2 cups icing
sugar
1/4 cup margarine or butter
1/4 cup philadelphia cheese
1 tsp vanilla
Beat altogether to a creamy icing.
Lunar Rhubarb Cake
Cream together
1/2 cup butter
1 cup white sugar
1 egg
1tsp vanilla
Measure 2 cups flour 1 tsp b soda 1/2 tsp salt
Add 1 cup buttermilk alternating with the dry ingredients and mix
well
Stir 1 tbsp flour into 3
cups of 1/2 " long raw rhubarb and stir into the above
Put in 13" x 9" pan and smooth out
Mix till crumbly 1/4 cup butter 2 tsp cinnamon 1 cup brown sugar
and sprinkle
over the cake. Bake @ 350 for about 45 minutes.
