Rice Pudding.
In a 2 quart casserole combine 3 and 1/2 cups milk, 1/2 cup of brown sugar, 1/2 cup raw rice, 1/2 cup raisins, 1 tsp. vanilla, 1/2 tsp. salt, 1/2 tsp. cinnamon and 1/2 tsp. nutmeg. Stir, cover, Bake @ 300 for 1 and 1/2 hours without peeking or stirring. Serve hot or cold with warm milk or cream on top.
Cherry Berry on a cloud.
Butter a large cookie sheet about 12x18. Beat 6 egg whites, 1/4 tsp salt, 1/2 tsp cream of tarter until foamy. Beat in 1 and 3/4 cup of sugar, 1 tbsp. at a time until stiff and glossy. Spread on your cookie sheet. Bake 1 hour at 275. Turn oven off and leave 12 hours. Don't open oven door. I do this part at night before I go to bed and it stays in the oven overnight. The next morning beat 2 cups of cream in a bowl. Get another bowl and blend 8 oz. of cream cheese, 1 cup sugar and 1 tsp. vanilla. Now gently fold in your beaten cream with 2 cups of colored miniature marshmallows. Spread this over your meringue on the cookie sheet. Chill about 6 hours or more and top with cherry pie filling.
Apple Dessert.
Mix 1 cup flour, 1 cup sugar, 1 egg, 1/4 cup margarine, 1 tsp. baking powder and 1/2 tsp salt together and put over sliced apples in an 8x8 cake pan and bake at 350 for 45 minutes.

Hour Salad
Mix
2 eggs,4 tbsp butter, 4 tbsp sugar and 4 tbsp. vinegar in a
double boiler and cook. Beat until thick and let cool. Whip 1 cup
of whipping cream and add it to the cold sauce. Fold in the
following::: 2 cups colored miniature marshmallows, 2 mandarin
oranges, 20 oz. fruit cocktail drained, 1 cup pineapple chunks
drained. Refrigerate overnight.
Raspberry Jam Bars or any other jam you may have.
1/2 cup margarine
1/4 cup brown sugar
1 egg
1 cup flour
1/2 cup oatmeal
1/2 tsp baking
powder
3/4 cup jam
Cream margarine and brown sugar together. Add egg, slowly add
flour, oatmeal and baking powder mixing well to make smooth. Form
into a ball and cut in half. Grease an 8x8 pan. Press half the
dough into the pan. Top with jam and spread the remaining dough
on top. Bake @ 350 for 35 minutes or until golden brown.
Blackberry Delight or any other berries you may have
This is a layered dessert that is best made in a 9"x13" glass pan. It can be made ahead of time and refrigerates very well.
BOTTOM LAYER: 1 cup sugar 2 cups biscuit mix 1/3 cup butter 1/2 cup chopped pecans
Mix first three ingredients in food processor, then spread evenly in the pan. Sprinkle nuts on top and press down. Bake at 350 degrees for 10 minutes. DO NOT BROWN. Cool to room temperature
MIDDLE LAYER: 8 oz cream cheese, softened 1 small carton whipping topping, 1/2 cup powdered sugar
Beat all ingredients with hand mixer until combined and fluffy. Spread over cooled crust.
TOP LAYER: 3 cups blackberries 2 Tbsp cornstarch 1 cup sugar 4 cups water
Mix and cook slowly until thick, then cool and pour over cream cheese.
Chill and enjoy!
Sunshine Lemon Sponge Pudding

Tbsp. flour
1 cup sugar
3 Tbsp. butter
3 eggs, separated
3 Tbsp. lemon juice
1 tsp lemon rind
1 cup milk
Cream butter, add sugar and cream it in with the butter. Blend in
the flour. Add the well beaten egg yolks. Add the milk, lemon
juice and rind and mix well. Fold in the stiffly beaten egg
whites. Pour into a greased baking dish or into individual baking
dishes and bake @ 325 degrees for 45 to 60 minutes. A cake top
will form with a custard layer below.
Fruit Salad With Honey Lime Dressing

Eggs
1/2 cup liquid honey
1/4 cup lime juice
1 cup plain yogurt
1-10 oz tin mandarin orange sections drained
2 cups strawberries halved
2 cups cubed honeydew melon or cantaloupe
2 medium bananas sliced
In a saucepan, combine eggs, honey and lime juice. Cook and stir over medium heat until mixture comes to a boil and thickens. Cool. Fold in yogurt and chill. Combine fruit, toss and chill in a covered bowl. Add dressing just before serving. Makes 6 servings.
Rhubarb
or any
other fruit
Crisp

cups cut up rhubarb
1 cup sugar
1/4 cup flour
1/2 teaspoon cinnamon
Combine above ingredients and put in
an 8x8 cake pan.
Pour 1/2 cup water over all.
Combine:
1 cup of flour
1 cup of brown sugar
1/2 cup melted butter
1/2 cup rolled oats
and mix to a crumbly mixture.
Sprinkle over rhubarb.
Bake at 375 degrees for about 35
minutes.
This may also be made with apples apricots or any fruit you happen to have but adjust the sugar as rhubarb requires a lot more sugar than most fruit. This is especially good with blackberries. Thanks Shane..Good lunch.

Start with the sour cream and add as much of the above as you like as you stir it all together. Top with red and green maraschino cherries. This can be made a few days ahead and stored in the fridge. Makes a very tasty attractive dessert. I serve it at Christmas.
