Home made pasta
For the basic pasta recipe.
In a large bowl mix
2 eggs with 1/4 cup of water and 1 tablespoon of oil and 1
teaspoon salt.
Stir in 2 and 1/2 cups of flour making a stiff dough. On a well
floured surface knead dough until smooth but not sticky (about 20
times) Cover with a damp towel or plastic wrap to keep it moist.
Let it rest for 30 minutes for easy rolling. Now cut your dough
in half. Roll the half into a shape 20 inches by 14 inches. Fold
this in half to the size of 10 by 14 inches. Now fold it again
into 5 by 14 inches. Now you cut your dough CROSS WISE into 1/2
inch strips for medium noodles or into 1 inch strips for wide
noodles. Then you unfold the strips. Place the strips on a single
layer on a pasta dryer rack. Now I have never seen a pasta dryer
rack but I use an old wooden clothes dryer rack that unfolds.
This recipe makes 1 pound of noodles and you still have the other
half of the dough.
