Potatoes
are packed with nutrition with
most of the nutrients lying just beneath the skin, so leave the skins intact or
peel very thinly. A 6 oz potato contains about 120 calories. Potatoes are low in
sodium, high in potassium and an important source of complex carbohydrates,
Vitamins C and B6, as well as a storehouse of minerals.
Golden Garlic potatoes
Mash about 4 large potatoes, add 1/2 cup whole milk, 1/4 cup mayonnaise, some chopped garlic, chopped red onion, Make these when you are not serving gravy as they are tasty and moist enough that you wouldn't put gravy on them. I make these when I have steak from the barbecue.
Shepherds Pie
Cook hamburger in pan (about 1 lb per 4 people) with a few handfuls of chopped veggies. Add a cup of Kraft salad dressing, Use what you have in the fridge. Top with mashed potatoes and broil for 5 minutes. If you use ham instead of ground beef, mashed sweet potatoes make a good topping. Biscuit mix also makes a good topping.
One Pan Potato Bake
Put potato wedges, sliced onions, eggplant, peppers and boneless chicken pieces in casserole dish. Coat with zesty Italian dressing. Bake at 450 for 40 minutes. Sprinkle with grated cheese and bake an additional 5 minutes.
Scalloped Potato Casserole
Thinly slice about 4 or 5 potatoes and layer in pan with sliced onions, mushrooms and ham. Sprinkle with parmesan cheese. Repeat layers 2 more times. Mix one cup miracle whip salad dressing with one cup milk until smooth and pour over potato mix. Sprinkle with additional cheese to cover top. Bake covered in 450 oven for 50 minutes or until potatoes are tender.
Crunchy Potato Casserole
Combine
1/2 cup of onion cut into small pieces with 2 cups frozen
hash brown potatoes, 1 cup grated mozzarella cheese, 2 tbsp
butter, 1 tsp salt and 1/2 tsp lemon pepper in a 9x9 oiled pan.
Beat 2 eggs with 1 cup of cream and pour this over potato mixture.
Bake at 350 for 20 minutes or until golden brown. Decorate with
parsley and paprika.
Potato Latkes
2 pounds potatoes peeled and grated
1/2 cup of flour
2 eggs
2 tbps grated onion
Sprinkle on some nutmeg and salt and pepper. Stir altogether.
Drop by spoonfuls into a little hot oil in the fry pan and flatten
down and cook for 3 minutes or so and turn over and cook the
other side.
Potato Bologna
2 and 1/2 lbs
potatoes, ground
3 lbs ground pork
2 lbs ground beef
1 onions, diced
2 Tbsp salt
1 tsp pepper
1 tsp allspice
Mix all together and stuff in casings. The sausage can be
boiled then fried in butter in a skillet. You don't want
the leanest meat otherwise the sausage will be very dry. I cut
the recipe in half but it still makes quite a bit. Can be
frozen. Can also be made into patties and fried.
Baked Potatoes (Deluxe)
Scrub
and oil and pierce 6 potatoes and bake until done.
Remove potato from skins leaving a 1/4
inch border and set potato shells on baking sheet. Mash potato
with 2 tbsp each soft cream cheese, parmesan cheese and parsley.
Cook 1/2 lb ground beef with 1 minced onion, 3 tbsp
worsestershire sauce, 1/2 tsp thyme, 1 tbsp tomato paste and salt
and pepper. Fill potato shells with beef mixture. Spread potato
mixture over this and heat in 400 degree oven for 15 minutes. I
usually make this in the morning and it is already to just pop in
the oven 15 minutes before dinner.
