Description
The ancho is a dried poblano chile. It measures 4 to 5 inches long and about 3 inches along the top. It's color ranges from dark red to a dark mahogany. It is the sweetest of the dried chiles and has a mild fruity flavor.

Preparation and Serving
The ancho is one of the most widely used chilies for moles and sauces.
