Description
Globe artichokes are an edible variety of thistle in the sunflower family. The originated in the Mediterranean. Nearly all artichokes grown in the United States are from Castroville, CA, south of San Francisco. The artichoke grows on a plant that stands 3 to 5 feet high and are usually round and slightly pointed on top. Choose an artichoke that is compact and heavy for it's size. It should have tightly packed bright green leaves.

Preparation and Serving
Artichokes can be bioled, steamed, baked and broiled. You can store artichokes unwashed in a perforated plastic bag for up to 4-5 days. Once cooked, they should not be left at room temprature for long periods and will keep in the refrigerator for 24 hours.
