Description
Chayote is a squash that closely resembles a pear. It varies in color from yellowish white to pale green to dark green.

Preparation and Serving
The chayote can be eatan raw in salads or with a vinaigrette. It can be boiled or steamed for 10 to 15 minutes and used in a variety of dishes. It can be used as a substitute for summer squash in many recipes.
