Description
The plantain is 10 to 15 inches long. It's thick skin is green and ripens to yellow and then black. It is native to Malaysia and is a staple food in many parts of Africa, India, and Central and South America.

Preparation and Serving
The plantain is most often used as a vegetable because of its high starch content. It is somewhat like a sweet potato. It is often used in soups and stews. It can be boiled, baked, fried, or even grilled.
