Description
The tamarind is indigeneous to India and grows in tropical and sub-tropical climates. The pod or fruit of the tree measures 4 to 6 inches in length and is reddish-brown in color. It contains 1 to 12 hard shiny seeds surrounded by a dense pulp containing fibrous filaments.

Preparation and Serving
Tamarind pulp is used fresh, dried, candied, and pickled. It is used in candies, jams, sherbets, beverages, soups, sauces and marinades.
