Caesar Snap Pea Salad
DRESSING:
4 Tablespoons olive oil
2 tablespoons red wine vinegar
3 tablespoons worchestershire sauce
2 one inch squirts anchovy paste-optional
1/4 cup parmesan cheese
2-3 cloves garlic. pressed
1/4 teaspoon dry mustard
1/2 teaspoon salt
Egg yolk
2 heads Romaine lettuce
1 cup croutons
1/4 pound Sugar Snaps
More parmesan to taste-optional
Mix dressing ingredients in the bowl the salad will bs served in.
Break lettuce into bite-size pieces and add dressing alcng with
the Sugar Snaps and the croutons. Toss salad,
adding more parmesan cheese if desired.
