Broccoli Pesto Sauce
INGREDIENTS
- 3 1/2 C broccoli flowerets
- 1/3 C fresh basil
- 3 T pine nuts (or walnuts)
- 1 t garlic, minced
- 1/4 t salt
- 1/2 C extra-virgin olive oil
- 1/2 C fresh Parmesan, grated
- 1 lb pasta
DIRECTIONS
- Follow directions on package to cook pasta.
- Wash broccoli and place in a 1-quart casserole, cover with plastic wrap, and microwave 3-4 minutes, until tender.
- Put broccoli, basil, nuts, garlic, salt and oil in food processor or blender. Process until mixture is smooth.
- Add Parmesan and process several seconds.
- Serve pasta and serve with Broccoli Pesto sauce
