Eggs with Chili
INGREDIENTS
- 1 (14 1/2 oz.) can whole tomatoes, drained
- 1 t chili powder
- 4 eggs, slightly beaten
DIRECTIONS
- Remove seeds from tomatoes and chop finely.
- in a medium size microwave safe dish, mix tomatoes and chili powder. Micowave 3 minutes.
- Stir in eggs. Micorwave 2 minutes. Stir gently, moving outer edges to center. Microwave 2 minutes.
- Stir again, moving cooked outer edges to center. If eggs are not completely set, microwave another 1-2 minutes.
- Eggs should be slightly moist.
