INGREDIENTS
Put spinach in a 9" pie plate. Microwave for 2 minutes. Rotate dish a half turn. Microwave another 2-4 minutes, until defrosted. Transfer spinach to a seive and drain well, squeezing out all excess moisture.
In medium bowl, mix ricotta, egg, parmesan, parsley, basil, nutmeg, and pepper. Add spinach and mix well.
Divide the filling among the crepes, putting it along one side. Roll the crepes to enclose the filling.
lightly grease a 7" X 11" baking dish. Arrange the crepes seam side down, in the dish. Spoon the sauce over the crepes. Cover the dish with wax paper. Microwave on medium (50%) power for 5 minutes. Rotate the dish a half turn. Microwave on medium (50%) power another 5-7 minutes, until heated through.
