Puffed Peach Pancake

INGREDIENTS

DIRECTIONS

  1. In a large bowl, beat the egg whites with an electric mixer until stiff peaks form. Set aside.
  2. In a medium bowl, beat the egg yolks, milk, flour, lemon rind, and honey until smooth.
  3. Lightly stir half the yolk mixture into the whites. Then fold this mix into remaining yolks.
  4. Lightly grease 8" by 8" baking dish. Spoon the batter into the dish. Top it with the peaches, almonds and nutmeg. Microwave on high for 4 minutes or until set.
  5. Cut into squares and serve warm.
Variations: You may use a nectarine or two apricots for the peach.
