Puffed Peach Pancake
INGREDIENTS
- 4 egg whites
- 2 egg yolks
- 3 T milk
- 2 T whole wheat flour
- zest of one Lemon
- 1 T honey
- 1 peach, sliced thin
- 1 T ground almonds
- Pinch grated nutmeg
DIRECTIONS
- In a large bowl, beat the egg whites with an electric mixer until stiff peaks form. Set aside.
- In a medium bowl, beat the egg yolks, milk, flour, lemon rind, and honey until smooth.
- Lightly stir half the yolk mixture into the whites. Then fold this mix into remaining yolks.
- Lightly grease 8" by 8" baking dish. Spoon the batter into the dish. Top it with the peaches, almonds and nutmeg. Microwave on high for 4 minutes or until set.
- Cut into squares and serve warm.
Variations: You may use a nectarine or two apricots for the peach.
