INGREDIENTS
Sprinkle eggplant with salt and cover with boiling water. Let stand 5 min. Drain.
Combine eggplant, oil, onion, garlic and seasonings in glass dish and cover. Cook, covered, at full power until onion is tender (about 8 min).
Add green pepper and stir. Cook 6 min at two-thirds power. Add tomatoes and parsley. Cook at full power until vegetables are tender (about 5 min). Let stand 1-2 minutes. Serve.
