White Sauce
Makes about, 1 cup (1/2 pt)
INGREDIENTS
- 1 C milk
- 1 T butter
- 3 T plain flour
- salt and pepper (or sugar for a dessert sauce)
DIRECTIONS
- Put the butter or margerine in a large bowl and microwave for 1 minute.
- Add the flour and whisk until smooth.
- Add the milk and whisk until mixed.
- Cook for about 3 minutes, but whisk every 30 seconds, until the sauce boils and thickens and is glossy and smooth.
- For a savoury sauce, add salt and pepper to taste. For a dessert sauce, sweeten to taste.
To make 2 cups (1 pt) :
- Double the ingredients.
- Cook for 2 minutes.
- Cook for 5-6 (4-5) minutes, whisking frequently.
Make Ahead :
- White sauce may be refrigerated (covered) for up to 48 hours or frozen

Variations :
- Cheese sauce - add a pinch of dry mustard with the flour, add 50 g/2 oz finely grated mature Cheddar cheese
- to the hot sauce and stir until melted.
- Quick Bechamel Sauce - add a crumbled vegetable stock cube with the flour and season with pepper only.
- Onion Sauce - cook a finely chopped onion in the butter for 1 1/2(1 1/2) minutes before adding the milk.
- Low-Fat Sauce - use low-fat spread and low-fat milk.
