White Sauce

Makes about, 1 cup (1/2 pt)

DIRECTIONS

  1. Put the butter or margerine in a large bowl and microwave for 1 minute.
  2. Add the flour and whisk until smooth.
  3. Add the milk and whisk until mixed.
  4. Cook for about 3 minutes, but whisk every 30 seconds, until the sauce boils and thickens and is glossy and smooth.
  5. For a savoury sauce, add salt and pepper to taste. For a dessert sauce, sweeten to taste.
