Simple Curry Powder
Makes 4 Tablespoons
Spice seeds can be bought in bulk at most health food stores. Take advantage of this and make your own curry powder, which may be stored in a cool dark place for up to several months.
4 tsp. coriander seeds
4 tsp. cumin seeds
2 tsp. fenugreek seeds
2 bay leaves
1 tsp. black peppercorns
1 tsp. ground turmeric
1 tsp. pure chili powder
Dry roast the coriander, cumin and fenugreek in a skillet until lightly browned, 1-2 minutes, then grind in a spice grinder with the bay leaves and peppercorns. Shake with the turmeric and chili powder in a small, airtight container.
