KEDGEREE
Kedgeree is a fish and curry dish
4 tbsp. butter
2 cups cooked rice
2 cups cooked fish *
3 tbs. raisins
3/4 cup heavy cream
1 tsp. (or more) curry powder
salt and pepper to taste
4 hard-boiled eggs, chopped
3 tbsp. parsley, finely chopped
Melt butter in heavy-bottomed pan or wok.
Stir in rice, fish, raisins, cream, curry powder, salt, pepper.
Mix well; cook only until heated through.
Arrange on a heated platter, garnish with chopped egg and parsley.
* (Can be made with canned salmon)
Serves 6.
