Salmon and Wild Rice Soup.
Ingredients:
8 slices of bacon 1 medium onion diced 1/4 cup flour 1 small can of mushrooms, drained 2 cans of chicken broth 1 cup of half and half 1 can of pink salmon, drained and flaked 1 package of Uncle Bens wild rice mix- prepared according to directions.
To make:
Fry bacon till crisp, drain on paper towels and crumble to bite size pieces. In bacon fat, saute onion and mushrooms until onion is tender.Add flour and stir to make paste.Add chicken broth and heat until boiling, then add half and half.When it reaches boiling again, add the salmon and the prepared wild rice mix.Finally add the bacon and heat to boiling one last time.
We enjoy this with home-made bread on a chilly day. Makes a wonderful Sunday brunch meal.This will serve 4.
