Hey there, I recently started making scotch eggs ...... and here is the recipe I use ( which I got off the net btw)
SCOTCH EGGS
6 hard boiled eggs 1 lb. sausage meat (500g) 1/2 cup rolled oats (40g) 1 Tbsp. mustard (15ml) 1/4 tsp. black pepper (1ml) 1 cup bread crumbs (100g) 2 eggs beaten
1) preheat oven to 400degrees F (200 C) 2) make the covering : mix all ingredients thoroughly and divide into 6 portions. 3) Cover the eggs with its portion of the sausage mixture. 4)Bread the covered eggs:roll each egg in bread crumbs, then into beaten egg, and once again in bread crumbs. 5) Set eggs on a cookie sheet and bake for 15 minutes,Turn them over and bake another 15 minutes. 6) Serve sliced in half.
Makes 6 Delicious either hot or cold.
