MINESTRONE SOUP

2 pints meat or veg stock
1/2 small cabbage
2 med sized potatoes
1 small carrot
1 large leek
2-3 sticks celery
4-6 ozs peas
4-6 ozs green beans
1/2 clove garlic
2 med tomatoes
1 oz bacon fat
1-2 ozs rice

Shred the cabbage, peel and chop the potatoes and carrot.
Trim and chop the leek and celery
Chop finely the 1/2 clove garlic
Peel and slice the tomatoes
Add the bacon fat to a pan,and saute the garlic,
add the vegetables except the tomatoes.
Fry gently for 10 mins without browning, stirring all the time.
Add the stock and bring to the boil
Add the rice then the sliced tomatoes
Lower the heat and cook gently for 30-40 mins.
Season with salt and pepper.
