SPONGE PUDDING WITH SAUCE

Made in the microwave

Ingredients:

100g (4oz) margarine
100g (4oz) castor sugar
100g (4oz) self raising flour
1 x 5ml (1 tsp) baking powder
2 x size 2 eggs - beaten
3 x 15ml (3 tsp) milk
3 x 15ml (3 tsp) jam or syrup

Instructions :

1. Cream the margarine and castor sugar, then add the eggs slowly while still beating.
2. Add a tablespoon of sifted flour with the eggs and fold in the rest of the flour and baking powder.
3. Stir in the milk
4. grease and line the base of a 1 litre (2 pint) dish and add cake mixture.
5. cook for about 3-4 minutes on HIGH.
6. Place the jam or syrup in a glass bowl and heat for 30-45 seconds.
Turn the sponge pudding out onto a serving dish and pour the sauce over.
Serve.
