PASTA WITH GENOVESE SAUCE

1 chuck or rump roast
1/2 c. water
2 lbs onions, sliced
salt and pepper to taste
1/2 c. canadian bacon
1/2c. tomatoes, diced with juice
2 stalks celery, chopped
1 lb. favorite pasta
1/2 c. white wine
parmesan cheese, grated

Place all ingredients, except pasta, in a large pot.
Cook covered, over low flame for 2-3 hours.
During the last 45 minutes, remove lid and continue to simmer.
Remove meat from sauce and serve as second course.
Cook pasta according to instructions and drain.
Add a few ladles of sauce to pasta and mix well.
Serve, topped with another ladle of sauce,
and garnish with a small amount of parmesan cheese.
Serves 4-6
