Welsh Cakes
 

(8 oz) self raising flour
A pinch of salt
(2 oz) margarine
(2 oz) lard
(3 oz) granulated sugar
(2 oz) currants
Zest of an orange
1 small egg, beaten
(1-2 tbsp) milk
 

In a bowl, sift together flour and salt,
rub in margarine and lard until mixture resembles breadcrumbs.
Add sugar, currants, orange zest and mix well.
Stir in the egg and enough milk to make a fairly stiff dough.
Roll out on a floured board to (0.25 inch) and cut into (2.5 inch) rounds.
Heat the griddle on a medium setting for 4-5 minutes.
Lightly grease the hot griddle with lard then cook cakes until golden on both sides.
