Welsh Cakes
(8 oz) self raising flour A pinch of salt (2 oz) margarine (2 oz) lard (3 oz) granulated sugar (2 oz) currants Zest of an orange 1 small egg, beaten (1-2 tbsp) milk
In a bowl, sift together flour and salt,rub in margarine and lard until mixture resembles breadcrumbs.Add sugar, currants, orange zest and mix well.Stir in the egg and enough milk to make a fairly stiff dough. Roll out on a floured board to (0.25 inch) and cut into (2.5 inch) rounds. Heat the griddle on a medium setting for 4-5 minutes. Lightly grease the hot griddle with lard then cook cakes until golden on both sides.
