WINE AND HERB GRILLED FISH


Wine and Herb Fish Fillets
Serves 4

Ingredients:
1/4 cup Chablis or other Dry White Wine
(Non-alcoholic substitute: 1/8 cup Water with 1/8 cup Apple Juice)
2 Tbs. Fresh Lemon Juice
4 Oz. Orange Roughy or other White Fish(Fresh Perch is also wonderful)
1/2 tsp. Dried Parsley
1/4 tsp. Seasoned Salt
dash of Wishbone Italian Dressing
1/8 tsp. White Pepper
Non-Stick Cooking Spray
Fresh Lemon Wedges (Optional)
Mix together wine and lemon juice in a shallow dish and add the fish, turning to coat.
Sprinkle the fish with the spices and Wishbone italian dressing
Cover fish in the bowl and marinate for about 30 minutes in the refrigerator.

Remove the fish from the marinade and save the liquid for basting.
Before putting the grate on the grill, clean and spray with pam or wipe lightly with oil
Grill fish over medium-hot coals for 5 minutes on 1st side, then 3 on the other,
or until the fish flakes easily when tested with a fork.

Serve with simple white rice, tossed green or ceasar salad and a light white or blush wine.
