Lasagna Melt Sandwich
Serves 4
Ingredients:
1/4 cup Low-fat Sour Cream
2 Tbs. Onion, finely chopped
1/2 tsp. Dried Oregano or Italian seasoning
1/4 tsp. Salt
8 slices French Bread
8 Bacon Strips, halved and cooked
8 Tomato Slices
4 Slices Mozzarella Cheese or 3-4 oz. Shredded
2 Tbs. Butter or Margarine
In a non-stick skillet over medium heat, cook bacon.
Meanwhile, combine sour cream, onion, oregano, and salt in a small
mixing bowl.
Spread mixture on four slices of coarse bread.
Top each of
the four slices of bread with four bacon pieces.
Add tomato and
cheese slices, or shredded Mozzarella cheese.
Top each sandwich with
remaining bread slices.
Melt butter or margarine in a clean skillet over medium heat.
Cook
sandwiches on both sides until the bread is lightly browned and the
cheese is melted.
Serve warm with a leafy salad or cold pasta salad,
or both.

Use what you have in the fridge!
