Ingredients:
2 cans White or yellow hominy; 14oz
4 Eggs; beaten
8 oz Chorizo or pork sausage (cooked and drained)
1 cup Cheddar cheese; shredded
1/2 c Green onion; sliced (use the green part only)
1 can (or 1/2 cup fresh) Green chilies; chopped,
1/2 tsp cumin
Preheat the oven to 350 degrees.
Grease a 9-inch
glass baking dish.
In a large bowl combine the hominy,
eggs, cumin, chorizo, cheese, onion and chilies if desired.
Pour into the prepared dish.
Bake for 30 to 35
minutes or until set.
Let stand for 5 minutes before
serving.
Serve with spanish rice and a green salad
