Simple and Elegant Perch
Ingredients:
> Perch Filets, fresh or defrosted (I used 4 filets)
> 1/4-1/2 pound fresh mushrooms (I enjoy canned on occasion, but NOT in this recipe!!!)
> 1/2 of a medium yellow onion
> 1 Tbs. dried parsley
> 1 tsp. salt
> 1/4 tsp paprika
> 1/4 tsp cayenne pepper (this can be omitted if you don't enjoy the "heat")
> Freshly ground black pepper to taste
> 1/2 stick of butter
> a little olive oil or vegetable oil
Preheat oven to 375.
Slice the onion into thin long strips. Clean mushrooms, cut off stems. Then slice the mushrooms fairly thick.

Lay the filets in a baking dish with about an inch between them.
> Place a little olive oil on each filet, smear oil over the top of the filet with hand. sprinkle paprika, parsley and peppers over each fillet. This is to make them pretty as well as season them.

> next, lay the sliced onion completely around the edge of the pan as well as some in the gap between the filets. Then lay the sliced mushrooms on top of the onions, around the pan and between the fillets. cut pats of butter and place on top of mushrooms around the pan. finish with some freshly ground black pepper and a bit of salt over everything.
> cover with lid or foil and bake 30 minutes at 375.
> to serve, put some of the mushrooms and onions in the middle of the plate. make a well in the center and place fish fillet(s) there. serve with some crusty buttered bread on the edge of the plate.
