ELVIS' FAVORITE RECIPES
Peanut Butter & Banana Sandwiches
Ingredients:
1/4 c. creamy peanut butter
2 very ripe bananas
10 slices buttered bread
Butter
Directions:
Blend the peanut butter with the banana until creamy. Spread the mixture over 5 slices of the bread. Top with remaining bread. In a skillet, melt enough butter to coat bottom of pan. Place the sandwiches in the butter and grill them until the bread is lightly toasted. Flip to grill other side. Drain on paper towels.
Makes 5 sandwiches.
Crispy Fried Chicken
Ingredients:
1 c. pancake mix
salt to taste
3/4 c. water
1-2 lb. fryer chicken (cut into serving pieces)
oil
Directions:
In a mixing bowl combine pancake mix with salt and water. Beat 3 min. to blend. Dip the chicken in the batter and drain off the excess batter. Deep fry the chicken in hot oil (350) for 10 min. or until golden brown. Drain on paper towels.
Makes 4 servings
Meat Loaf
Ingredients:
1 1/2 lbs. ground beef
1 egg (beaten)
1 c. milk
salt & pepper to taste
1 c. bread crumbs
gravy or tomato paste
Directions:
In lg. mixing bowl combine the beef and egg. Add milk. Mix thoroughtly.Add salt and pepper and bread crumbs. Shape into a loaf. Place the loaf in a lightly oiled glass pan. Bake at 350 for 1 hour or until meat is brown and cooked on the inside. Serve with gravy or tomato paste/sauce.
Makes 6 servings
Cheeseburgers
Ingredients:
1 1/2 lbs. ground beef
1/4 c. cold milk
1 tsp. salt
pepper to taste
6 slices American cheese
2 tsp. mustard
1/3 c. butter
6 hamburger buns (buttered & toasted)
1/3 c. chili sauce
3 tbls. pickle relish
Directions:
In lg. mixing bowl combine ground beef,milk,salt and pepper. Form into 6 patties. Slice the cheese to fit the hamburger buns. In sm. mixing bowl blend together the chili sauce, relish and mustard. In a skillet melt butter. Pan-fry the patties for about 12 min., turning several times as they cook. Place on hamburger buns. Spread each with relish mixture. Top with cheese. Place the patties under the broiler, cooking until the cheese begins to melt.
Makes 6 servings.
Arrange the sliced tomatoes on top of 4 slices buttered bread. Place 2 strips of bacon on each sandwich. Top with the remaining bread slices. Cut the sandwiches diagonally.
Makes 4 sandwiches.

Ham Bone Dumplings
Ingredients:
1 lg. ham bone or leftover ham
2 qts. water
salt & pepper to taste
Dumplings
2 1/2 c. flour
1 tsp. salt
1/2 c. crisco shortening
1 c. cold water
Directions:
Simmer ham bone in water for 15-20 min. Season with salt and pepper. Combine dumpling ingred. to make dough. Add more flour if needed to make dough easy to handle. Place dough on floured board and roll very thin. Cut dough into small pieces and drop into pot with ham. Cook 20-25 min. more.
Baked Apple & Sweet Potato Pudding
Ingredients:
4 lg. sweet potatoes
3 med. apples
1 c. water
1/2 c. brown sugar
1/2 tsp. cinnamon
1 tsp. apple pie spice
1/2 c. butter (melted)
1/2 tsp. vanilla
graham cracker crumbs
Directions:
Wash and peel sweet potatoes and apples. Cut into slices. Cover bottom of pan with graham cracker crumbs. Layer potatoes and apples in dish. Mix brown sugar with water and pour over each layer. Season each layer with cinnamon, apple spice, butter and vanilla. Spread a few graham cracker crumbs over top. Bake at 350 degrees for 45 min. Let pudding stand for 4-5 min., then serve.
