CHICKEN & ARTICHOKES WITH SPAGHETTI
Ingredience :
1 1/2 lbs. boneless skinless chicken breasts (cubed)
1 c. onions (chopped)
3 tbls. extra virgin olive oil
1/3 c. sherry
1/4 tsp. salt
1/4 tsp. black pepper
1 26 1/2 oz. jar spaghetti sauce
1 tbls. dried or fresh sweet basil
1 tbls. dried or fresh oregano
1 1 /2 tbls. dried parsley flakes
1 8.5 oz. can artichoke hearts (chopped)
water
dash salt
1/2 box spaghetti
Directions :
Wash chicken & remove any fat. Cube chicken.Sprinkle
chicken evenly with garlic season all. Rub into chicken
and set aside in a bowl.. Chop onions. Add to chicken
To a heated dutch oven pot add oil, chicken. Add sherry.
Turn heat to med high & cook 5 min. Add onions, sauce,
salt, pepper, basil, oregano, parsley. Turn heat to simmer.
Mix well. Remove artichokes from can & chop. Add to
chicken. Simmer for 1 hr. Stir often.
To lg. pot add enough water for spaghetti. Add dash of
salt. When water comes to a boil, add spaghetti. Cook
according to directions. Serve
* I serve my spaghetti seperate from the chicken
