ROASTED PORK WITH ONIONS & POTATOES
Ingredients:
1 1/2 lbs. pork roast
garlic season all
1/4 c. corn oil
4 baking potatoes (peeled & quarterd)
2 lg. onions (peeled & quarterd)
4 c. water
1/2 tsp. salt
Directions:
Preheat oven to 375
Peel and quarter potatoes. To pot add water & salt.
Par boil on simmer for 8 min. Drain in sieve and set
aside. In oblong baking pan add oil and sprinkle season
all evenly in pan. Heat until oil bubbles. ** Do not let
season all burn. Add pork & brown 2 min. on all sides.
Remove from heat. Peel & quarter onions. Add onions and
potatoes to baking pan. Put in oven. Bake uncovered for
30 min. Turn potatoes over. Bake another 40-45 min.
