SMOTHERED PORK CHOPS
Ingredience :
4 boneless pork chops
1 tbls. cracked black pepper
1 tsp. salt
1/2 c. italian bread crumbs
2 lg. eggs (beaten)
5 tbls. butter or margarine
1 pt. light cream
1 tsp. paprika
1 1/2 tsp. nutmeg
1/2 c. chicken broth
1/2 c. grated parmesean / romano cheese
1 1/4 c. ketchup
Directions :
Remove fat from pork. Pound each chop on both sides. Season
chops on both sides with salt & pepper. Add eggs to bowl
Beat. Dip chops in eggs. Reserve eggs. To small bowl add bread
crumbs to a bowl. Coat all sides of pork. Set aside. To med pot
add cream, broth, butter or margarine, paprika, nutmeg, cheese
& eggs. Mix througherly. Simmer for 6 min. To baking dish add
1/2 c. ketchup to bottom of dish. Spread ketchup evenly. Add
the chops. Top chops evenly with the remaining ketchup. Add the
cream mixture. Cover & bake for 35-40 min. **The cream mixture
will turn to a foam. Serve
