EASY LEMON SQUARES
1 box (18.25 oz.) lemon cake mix with pudding
1/2 cup melted butter
3 eggs, divided
1 lb. powdered sugar
1 8 oz. package cream cheese, softened
2 tsp. lemon extract
Combine first 3 ingredients, using only 1 egg. Batter will be thick. Press dough into greased 9 x 13 pan. Blend 2 eggs and the last 3 ingredients. Mix well; pour over dough. Bake at 350 degrees for 35-40 minutes. Cool at least 1 hour at room temperature. Cut into squares. Store in refrigerator.
