Best Barbecued Beef Brisket

"Make plenty for seconds. This goes fast," reports Mike Hillis of Hillis­Celebration Specialists in Lincoln, Nebraska.

2 teaspoons celery salt
1 teaspoon garlic salt
1 teaspoon onion salt
1/2 teaspoon pepper
2 teaspoons Worcestershire sauce
1 4- to 5-pound fresh beef brisket
1 cup Russian salad dressing or
1 cup French salad dressing, plus 2 tablespoons honey
1 cup bottled smoke-flavored
barbecue sauce
1/4 cup sugar

1. In bowl, combine celery salt, garlic salt, onion salt, pepper and Worcestershire. Rub on surface of beef. Place meat in a shallow roasting pan. Cover tightly wit h foil. Roast in a 300° oven for 21/2 to 3 hours or till tender.

2. Remove meat from the pan; cool slightly. Cover; refrigerate. When meat is cold, cut across grain into thin slices. Arrange in 13x9x2-inch baking dish.

3. Combine salad dressing, barbecue sauce and sugar. Spoon over the meat. Bake, covered, in 325° oven for 1 hour. Serve on buns. Makes 16 servings.
