AWARD-WINNING BLUEBERRY MUFFINS
Hurst's Berry Farm sponsored a blueberry contest at the local county fairs. The following recipe is one of the winners from the Multnomah County Fair, courtesy of M. M. Heinrichs, of Salem, Oregon.
Ingredients:
1 3/4 cup sifted all-purpose flour
1/2 teaspoon salt
2 1/2 teaspoons double-acting baking powder
3/4 teaspoon ground mace
3/4 cup sugar
2 large beaten eggs
3/4 cup milk
1 teaspoon vanilla
1/3 cup melted shortening
1 cup blueberries
granulated sugar
Directions:
Sift the first 5 ingredients together into a mixing bowl. Combine eggs, milk, and vanilla extract and add the mixture to the dry ingredients. Add the shortening. Mix only until ingredients are blended, using about 28 strokes. Stir in blueberries. Drop the batter into well-greased and lightly floured muffin cups. Fill about 3/4 full. Sprinkle 1/2 teaspoon sugar over each muffin. Bake in a preheated 375 degree oven 20-25 minutes. Makes 14 regular muffins or 6-7 large ones
