South Western Biscuits
- 2 cups Flour
- 1 Tbsp. Baking Powder
- 1 tsp. Salt
- 1/3 cup Vegetable Shortening
- 3/4 cup 2% Milk
- 1/2 cup Chili Pepper, canned, chopped
- 1/2 cup Cheddar Cheese, shredded
Heat oven to 425 degrees F. Grate cheese. Combine flour, baking powder and salt in a bowl. Cut in shortening using pastry blender (or two knives) to form coarse crumbs. Add chilies and cheese and mix to combine. Add milk. Mix with fork until particles are moistened and cling together. Form dough into ball. Transfer dough to lightly floured surface. Knead gently 8 to 10 times. Roll dough 1/2-inch thick. Cut with floured 2-inch cutter. Place on ungreased baking sheet. Bake at 425 degrees F. for 12 to 14 minutes.
