SPECIAL CORNBREAD
1 cup yellow cornmeal
1 cup all-purpose flour
4 teaspoons baking powder
1/2 teaspoon salt
1 egg
1/4 cup melted butter (not margarine)
1 cup milk
1 package Jiffy yellow cake mix
Mix cake mix according to package directions, being careful to beat air into the mixture. Mix the rest of the ingredients separately, and gently fold in cake batter. Pour into a 9x13 baking dish. Bake in a preheated 400 degree oven until lightly browned, about 25-30 minutes.
