BUTTERMILK WAFFLES
2 c. sifted flour
3 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1/4 tsp cinnamon
4 eggs
2 c. buttermilk or sour milk
1 c. melted butter, margarine or salad oil
Start heating the waffle iron. Sift the measured flour, baking soda, baking powder , salt, and cinnamon into a medium bowl. Beat the eggs until light with a hand beater or electric mixer on high speed and stir in the buttermilk. Pour over flour mixture and beat with a hand beater or the electric mixer on high speed until the batter is smooth. Stir in the butter. Pour batter onto hot waffle iron until it spreads to 1 inch from the sides; gently bring the cover down. Reheat the waffle iron between waffles.
Note: You could beat eggs, add buttermilk, add dry ingredients and stir in oil. These are absolutely great.
