Maine Wild Blueberry Pancakes

 
Ingredients
1 cup milk
1 large egg
1/4 cup sour cream
1/2 tsp vanilla
1 cup flour
1 tablespoon baking powder
1 tablespoon sugar
1/4 teaspoon salt
2 tablespoons melted butter
1/2 cup fresh Maine blueberries, washed and picked over
About 1 tablespoon flour (for dusting blueberries)

In a large bowl, stir milk, egg an sour cream together. In a separate smaller bowl, stir together flour, baking powder, sugar and salt. Add flour mixture all at once to milk mixture. Stir until large lumps disappear. Stir in butter. Measure blueberries into smaller bowl and dust with flour, then gently fold them into batter. (This dusting process helps avoid the berries from "bleeding" into the batter.)

Ladle two large tablespoonfuls of batter onto a hot, lightly oil sprayed griddle and cook for 2 to 3 minutes per side.. Serve hot with real maple syrup.

Serves: Twelve 4 inch pancakes.
