Banana Nut Pound Cake
1 1/2 Cups vegetable oil 2 1/2 Cups sugar 3 eggs 3 Cups flour 1 tsp soda 3/4 tsp salt 1 tsp vanilla 1/2 Cup buttermilk 1 1/2 Cups mashed bananas 1 Cup chopped nuts 1 Cup coconut Combine and blend oil, sugar, and eggs. Sift dry ingredients. Combine vanilla, buttermilk, and bananas and add: alternately to first mixture and dry ingredients. Stir in nuts & coconut. Bake 1 hr. and 15 min. in 325 degree oven in tube, or Bundt greased pan. ** If desired spices may be added, e.g. 1 1/2 tsp each: cinnamon, cloves, allspice, and 3/4 tsp nutmeg.
