RED VELVET POUND CAKE
3 c. sugar
7 eggs
3 c. plain flour
1 c. milk
1 1/2 c. Crisco
2 Tbsp. vanilla
1/4 tsp. salt
1/2 to 1 bottle red cake color
Add sugar, one cup at a time to Crisco. Beat well. Add
eggs, one at a time. Beat well. Sift salt and flour together
and add alternately with milk and cake coloring (use enough
coloring to achieve desired color). Pour into tube pan. Bake
in oven at 325 degrees for 1 hour without opening oven door. It may
take a little longer.
Cream Cheese Frosting For Red Velvet Pound Cake:
8 oz. cream cheese
1 small can coconut
1 c. chopped pecans
1 box confectioners sugar
1/2 stick margarine
Mix all ingredients together with enough milk to make
spreadable.
