SWEET POTATO POUND CAKE
2 1/4 c. self-rising flour
1 1/2 c. cooking oil
1 c. nuts
2 c. sugar
4 eggs
1 c. coconut
1 tsp. cinnamon
3 c. grated raw sweet potatoes
1 tsp. vanilla flavoring
Cream oil and sugar well. Add eggs one at a time. Mix
thoroughly after each addition. Add dry ingredients 1/3 at a
time and mix thoroughly. Add nuts, coconut and potatoes. Bake
in tube pan 1 hour at 300 degrees. Two (9-inch) cake pans, bake 40
minutes at 325 degrees.
Topping for Sweet Potato Pound Cake:
1 (8 oz.) pkg. cream cheese
2 Tbsp. hot water
1 box powdered sugar
1/2 c. margarine
1 tsp. vanilla flavoring
1/4 c. chopped nuts
Cream cheese, water and margarine. Add sugar, vanilla
and nuts. Spread on cake.
