Busia's Soft Raisin Cookies

1 cup raisins
1/2 cup water
1 cup sugar
1/2 cup margarine
2 eggs
1/2 teaspoon vanilla
1 teaspoon salt
1 1/1 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg

Bring raisins and water to boil, simmer, uncovered 5 minutes, then set
aside. Cream sugar and margarine (butter flavored Crisco makes the best
soft cookies) until light; beat in eggs and vanilla until mixture is
fluffy. Stir in raising. Combine remaining ingredients and then stir into
mixture. Drop by heaping Tablespoons 2 inches apart on lightly greased
cookie sheets. Bake in preheated 375 oven for 12 minutes or till lightly
browned. Cool on wire racks. Store in tightly covered containers (cookies
will become soft.) Makes at least 2 dozen large cookies.
