MARINATED SALMON IN A PEPPER CRUST

2 tablespoons Worcestershire sauce
2 teaspoons lemon juice
1 teaspoon sugar
2 cloves garlic, minced
4 6-ounce skinless salmon fillets, 1/2- to 3/4-inch thick
l tablespoon finely cracked whole black pepper
1 tablespoon olive oil
1. In a small bowl, combine the Worcestershire sauce, lemon juice, sugar and garlic. Mix well. Place the salmon fillets in a shallow dish; pour the marinade over the fillets. Cover and refrigerate the fillets for 30 minutes.
2. Remove salmon from marinade. Sprinkle cracked pepper onto both sides of each salmon fillet.
3. In a 12-inch skillet, cook salmon in hot oil over medium-high heat for 2 to 4 minutes per side or until salmon flakes easily with a fork. Makes 4 servings.
