MARINATED SALMON IN A PEPPER CRUST
- 2 tablespoons Worcestershire sauce
- 2 teaspoons lemon juice
- 1 teaspoon sugar
- 2 cloves garlic, minced
- 4 6-ounce skinless salmon fillets, 1/2- to 3/4-inch thick
- l tablespoon finely cracked whole black pepper
- 1 tablespoon olive oil

. In a small bowl, combine the Worcestershire sauce, lemon juice, sugar and garlic. Mix well. Place the salmon fillets in a shallow dish; pour the marinade over the fillets. Cover and refrigerate the fillets for 30 minutes.

. Remove salmon from marinade. Sprinkle cracked pepper onto both sides of each salmon fillet.

. In a 12-inch skillet, cook salmon in hot oil over medium-high heat for 2 to 4 minutes per side or until salmon flakes easily with a fork. Makes 4 servings.
